Our Caviar

The quality of caviar depends on numerous factors. Most important are the living conditions under which the sturgeons grow to maturity. The german ministry of agriculture in Sachsen wrote in a 48 page study: „Sturgeons which grow up in ponds,lakes and recirculation farms accumulate Geosmin and Sorbeol which influences the taste of meat and caviar badly.“ This does not happen when sturgeons grow up in raceway farms where the fish live in a constant flow of oxygen rich unpolluted water. ICC caviar is harvested from sturgeons who live under perfect conditions in raceway farms. Our customers – including Russians -always confirm : There is no difference of taste between ICC´s farm caviar and the best wild caviars.
